A traditional Punjabi-style dish, prepared using protein-rich kidney beans with the use of aromatics like onions, ginger, garlic, fragrant spices, and tangy tomatoes, Rajma Chawal is a staple dish in a typical Indian home.

How to Make Rajma Chawal at Home?

1.  Take a bowl of Rajma and wash it. Soak them overnight and pressure cook them till they become soft. Wash them again before putting them on a pressure cooker with 2 cups of water, half tsp salt, and turmeric. Once the rajma gets soft and squishy, remove it from the stove and keep it aside.

2.  Chop onions and tomato in the finest manner, grate the tomatoes and keep them aside. Make a ginger and garlic paste with finely cut green chilies.

3.  Take a deep bottom pan, add mustard oil, and heat it. Now, add black cardamom, cinnamon, clove, and peppercorn before going to add onions. Cook the ingredients till they turn golden brown. Add tomatoes and cook on the high seam for about 4-5 minutes. Add the black pepper, cumin, coriander, ginger, garlic, and chili paste. Cook until the spices begin to smell good and the oil begins to drip down the sides of the pan. Add Rajma and one cup of water. Mix well, then cook for 10 minutes. When finished, add the ghee. You can use coriander leaves as a garnish. Rajma is ready for you.

4.  Now, wash 1 cup of rice in running tap water. Put it in a pressure cooker along with 1-2 cups of water. Add a little salt for taste. Give 1-2 whistles and allow the cooked rice to settle down. Serve hot with prepared Rajma once the cooking is done.

Palak Paneer

How to Make Palak Paneer at Home?

1.  Put finely cut spinach in 1/2 cup (120ml) water in a 3-quart saucier over high heat. Bring the water to boiling temperature, cover it with a lid, and then heat it to medium-low temperature. Cook the spinach for 5 minutes until it gets completely droopy. Transfer the pan contents to a countertop blender and blend for about 1 minute on high speed until it gets totally smooth. Set the puree aside.

2.  Heat 2 tablespoons (30ml) of oil in a 10-inch nonstick skillet over medium-high heat until it shimmers. Cook the first turn of half of the paneer pieces for about two minutes, or until it turns brown. Repeat with additional paneer pieces after transferring the first one to a plate. Cook cumin and mustard seeds in the remaining tablespoon of ghee for about 30 seconds, or until the seeds start to pop. For about 30 seconds, add the garlic, stir, and heat until the garlic is fragrant and the pieces begin to turn color.

3.  Transfer spinach puree into a skillet. Season it with salt and chili powder and then, stir to combine. Add cooked paneer with cream, stir it and serve immediately.
